Crockpot Veggie Lasanga
I'd like to start off by saying I really do not enjoy cooking. I will bake all day but cook dinner? Eh, I rather eat cereal. Just keepin' it real. But I have a growing baby boy and big boy (husband 😉) who need to eat real food. So, I have made it a goal of mine to cook one crock pot dinner a week. I do cook a few of the other nights but it's usually something simple like protein and veggies. Or take our Chipotle haha.
Tonight's crock pot meal was veggie lasanga. My expectations were a little so so just because I'm not a huge huge pasta fan. But my husband is and I know Nash would eat it. It was so super yummy and very easy!
I'm linking the actual post I followed from Pinterest. I altered it a bit and used chopped spinach instead of kale and did half ricotta and half cottage cheese. Dan couldn't even tell there was cottage cheese it in and the spinach blended so well Nash ate it all up. Happy momma and happy family!
I apologize for not having more appealing photos but Monday nights are busy in our house and we all ate at different times. I managed to take a few photos of Nash as he was just about over it (okay he was actually really over it) and a super attractive photo of half of the lasagna in the crock pot.
